Chicken and Stuffing Casserole

I know I’ve been MIA on my blog for a while so I figured I’d share this delicious and easy casserole I made for dinner!

I would just like to start off by saying there are just 2 humans in my household and this is my version of meal-prep. Not to eat healthy but to avoid eating out during our work week. 🙂 I get tired of eating the same things all the time!

First, preheat oven to 350. I cooked 3 chicken breasts in a pan on the stove, seasoned with salt, pepper, and Mrs. Dash original blend (salt free) seasoning. Once done, I cut the chicken up into cubes.

I also went ahead and prepared my Stove Top stuffing while the chicken was cooking.

In a mixing bowl, I started preparing my other ingredients, starting with 2 cans of cream of chicken.
Here, all I did was add a can of green beans, the cut up chicken, and salt and pepper.
Mixed it all up and poured into a greased casserole dish.
Covered with prepared Stove Top.
Topped with some shredded cheese.
Cover and bake at 350 degrees for about 20-25 min.
If you want the top to be a little crispy, uncover it and let it bake another 5 min.
I couldn’t leave out gravy. We love this stuff. Don’t judge me- I’m a messy cook.
Voila! It’s delicious. 🙂

P.s. you can put whatever ingredients you want in there- like corn. I like to experiment!

Mine and hubby’s lunches for a couple days 😊
